Soaking in Brine!

  1. Actually, it was great! We ate a fresh one about a week in and Charlotte's wheel is still aging in the "cave". Hers has taken on a lovely rind. I wash it in brine whenever I make new cheese and brush it in a little oil.

    I made a handformed wheel last weekend and I'm going to try cold-smoking it for a short period today. We'll see. I've had plenty of disasters, too.
